Abstract

A review of mycotoxins was made. Aflatoxins are the most common of them, and together with ochratoxins and fumonisins produce cancer in man. The historical aspects of their discovery, as well as some of their fundamental general characteristics and what can be done to reduce in some way the appearance of cancer, which has been the second cause of death in Cuba for many years, were dealt with in this paper. Some of the measures that should be taken to prevent this disease are educating persons in various nutritional aspects to have a balanced diet and improving the environmental conditions so as not to contaminate food
