The implementation of surveillance components is an essential element in any food fortification program to guarantee that the beneficiary population receives on account of this product the adequate amounts of the added nutrient. Salt iodization is still the election alternative for the pevention and control of iodine deficiency disorders. At present, sufficient volumes of salt are produced in Cuba to meet the national demand. This paper deals with the proposal of the design of the salt iodization surveillance system, an indispensable element to attain the program's sustainability.
