Lobster is considered a product of great value in high kitchen. In Cuba, the main fishing resource is the spiny lobster Panulirus argus, the sector contributing approximately 25% of the catch volumes and 75% of the economic income, hence the need to guarantee a continuous flow of the same towards the industry. In order to achieve the adequate crustacean health, the specimens are kept in the gathering center, facilities that contain cages submerged in the sea and where the total catches are stored. For these reasons, it is essential to know, through a series of physical-chemical analyzes of the water, factors that allow optimal environmental conditions for the conservation and maintenance of lobster in these collection centers.
