Abstract

Engineering techniques were applied for time standardization during the process of manual harvesting of coffee, and these allowed to identify the elements of the process; evaluate the rhythm; estimate fixed and variable influencing supplements; and define the standard time. This study also included an analysis of micromovements or therblighs of the process that are essential for the evaluation of coffee pickers´s performance and definition of the standard time of a coffee picking cycle. A videographic technique was applied to record the information in situ during coffee harvesting with the use of traditional system. The standard times and performance factors in terms of efficiency and quality indicators provide information for monitoring, control and decision-making process in the coffee farms; on the other hand, it contributes to the establishment of training and study plans for coffee pickers.
