Abstract

This article synthesizes the results of an investigation carried out in the bean chain of the municipality of Remedios, province of Villa Clara. This production system not only represents an opportunity to contribute to the food security of the consumer population, but also a cost-effective option for the labour force linked to the various activities from production to marketing.

The incorporation of a population perspective into value chain studies is proposed, with the aim of complementing economic feasibility and technological investment diagnoses with those relating to the labour force. To this end, a diagnosis is made of the demographic potential of the chain in question from a non-traditional perspective. Therefore, the quantitative potential, dividend or demographic bonus that would correspond to a very low value of the demographic dependency index is not used. Its qualitative value is recovered in the labor contexts, in close connection with the labor market.
