The process management approach is a way to achieve client’s satisfaction and to obtain better results in organizational performance. The fishing industry sector in Cuba has only superficially explored this work philosophy despite the benefits of its application. That is why the following research is carried out in Sancti Spíritus Fishing Enterprise, which needs to improve efficiency of aquaculture species cultivation process. Therefore, a procedure for process management based on the Deming cycle is proposed, which was applied in the Aquaculture Station of La Sierpe municipality. The main results obtained were: sub-processes of Claria Gariepinus intensive cultivation documentation, design of management indicators that allow to know subprocesses trajectory and trend, as well as main causes of risk and variability identification. All of the above allowed the proposals of corrective actions to solve its deficiencies and reduce process losses, which achieve quality improvements and cost reduction.
