Abstract

ANAYA VILLALPANDA, Matilde  and  RODRIGUEZ FUENTES, Michel. Aging of brandy with magnetic field extremely low frequency. RTQ [online]. 2012, vol.32, n.3, pp. 261-271. ISSN 2224-6185.

Magnetic field extremely low frequency (60 Hz) and density 60, 70 and 80 Gauss was applied to 700 ml of fresh waterfire to 60, 67 and 74 ºGL content in fracs PET with 3 g/L chip toasted American oak (Quercus alba) obtained from the staves barrels used. The samples were treated 3 times per week (12 treatments per month) for 60 minutes, during 3 months of study of aging. The results obtained showed a significant difference with respect to the control and the patterns of the same age by traditional aging. It is concluded that the magnetic field of extremely low frequency can be used in combination with the technique of bed packed for the aging of brandy, without affectations in their sensory parameters.
