Abstract

The extraction and transformation of cane juice into panela generates various forms of relationships that are part of the non-formal institutionality of the sector. It is not clear if the networks that make up the processing are directly related to the type of panelero complex where the juices are processed and if these links are contributing to the social capital of the group. The research used the approach of analysis of rural social networks-ARS, matrix language, links and graphs. Among the most relevant findings, family relationships are more decisive in the configuration of the network than the type of complex in which it processes. In addition, the local institutionality of the paneleros has made it possible to build social capital, mediated especially by trust.
